Doodhi/ lauki koftas are a sheer delicacy. The only problem is too remove the excess water after grating the lauki. So much water content is there that one has to squeeze it in between their hands to get rid of the surplus water and yet some water is still left. To get perfectly dried yet moist lauki for koftas place a muslin cloth and then grate the lauki in that muslin cloth. After the entire doodhi is grated just squeeze the excess water through the muslin cloth. This would ensure that no extra water is left in the doodhi only the correct amount of moisture is there so that it can help the besan bind the koftas.
